Prohibition Chicken

Created and established the concept. developed the concept vision, set the menu and beverage direction, restaurant, kitchen and bar design. Opening in April 2017.

3 Squares

Defined the culinary vision, provided menu content, menu systems, recipes, BOH systems, kitchen layout and design.

Hudson House

Conducted the initial ideations session and provided counsel and guidance to establish a detailed financial pro forma.  Once the financial model was completed worked we collaborated with the aRchitects and design team to establish the restaurant overall layout and flow, kitchen design, menu clarification, recipes, product specs, and BOH systems.  This concept will open in late spring of 2017.

East Hampton Sandwich Shop

Collaborated with the ownership to solidify the concept vision, provided a replicable and expandable model for growth.  Provided the foundational elements for Profitability through culinary, service standards, educational systems, kitchen design flow, practical recipe execution.  East Hampton Sandwich now is on its 7th  restaurant as of 2017

Juniper Grill

helped define and guide the concepts vision and then built the menu and food offerings to support the vision.  Juniper Grill is currently at 3 restaurants and growing.

 

Hub Streat

Provided a sounding board and counsel to help the owners of this restaurant create a very unique concept.  Coalesced the team’s food vision into a crave-able executable menu.  Opening Spring of 2017.

 

 

White Tail Bistro

The first of 4 concepts, for this project we act as the liaison and the owner’s project facilitator.  We are providing the coordination between the Franchisor and the Licensee to ensure the timely and successful opening of theses restaurant at Dallas Fort Worth International airport
